Can you still play Niche in early access?

Yeah, right click Niche in your Steam library, select "properties", then betas and select the version you want to play. Then wait for the game to "update" itself. If it gives you a pop up asking you if you want to play Niche or Niche when you start the game, select the lower option

How do you access the really early versions of the game, like 0.0.7?

Sadly only a handful of the betas are still available

Thought this page would be the most suitable for this post.

Felt nostalgic and booted up one of the oldest available version (0.1.5). Mind you, all these versions are quite glitchy still (obviously, they were removing bugs and glitches at this stage).

I took some screenshots, if y'all would like a gander:

The biggest issues were that the genotypes were bugged (snout and horns switched places on the gene bar), genes/illnesses randomly appeared, and each movement (moving, collecting, etc.) took 1 food 😱

The horns WERE the snouts, they weren't switching places

I think all of these were intentional.
