Niche isn't SUPER realistic, but it tries to be as realistic as possible. Animals just don't do flower crowns. They look adorable in them, but they can't make them; we have to do that. It was more of a story idea since attractiveness isn't a very well explored game mechanic; I know that at least when I play Niche, I have storylines running, and this just seemed like a fun little idea. And I would think that Nichelings would have the ability to make flower crowns; they build nests and gather grass, and some animals (birds in particular) will decorate their nests to make them more attractive.
